Not only is this fresh black bean and corn salsa beautiful and delicious, it is also a fun way to add some great nutrients to your diet.  Black beans and corn are full of fiber.  Beans are also rich in protein and corn is an excellent source of folate.  Red peppers contain a large amount of phytochemicals that act as antioxidants.  Red onions are one of the best natural sources of quercetin which has been found to possess cancer fighting, anti-bacterial and anti-inflammatory properties.  Cilantro is known for being a great chelator, which means it helps flush heavy metals from your body.  You can feel good about eating chips when you top them with this nutrient dense salsa!  It is also great as a salad on top of fresh greens or as a side with fresh grilled meat, fish or poultry.


Place 2 cups of fresh or thawed frozen corn in a large bowl.

Add 1 15 oz. can of black beans, drained and rinsed.

Add 1 red pepper diced.

Add 1 red onion diced.

Add 1/2 cup of chopped fresh cilantro.

Add 1 -2 sliced jalapeno peppers.  I slice them in rounds so they are easy to identify in the salsa.

That way those who don’t like it hot can scoop in the other direction.

Add 1/4 cup olive oil.

Add the juice of 2 limes and 1 teaspoon of salt and stir well.
