Acai
(pronounced ah-SAH’-ee) is a superfood that originated in the Amazon rainforest of Brazil.  These purplish-blue berries have one of the highest concentrations of antioxidants known.  They are also rich in essential fatty acids, vitamins and minerals, fiber, and contain nineteen different amino acids.  Adding this amazing berry to a smoothie is a great way to incorporate it into your diet.  I found these convenient packets of frozen acai at Whole Foods and Lakewinds.  To add to a smoothie you can either thaw a packet in the refrigerator overnight, or just break up the pack and add while frozen.  This peanut butter and acai smoothieis rich and creamy.  It tastes like a milkshake and makes a delicious recovery drink after a workout.


Pour 2 cups of  almond milk into a blender and add 2 packets of frozen acai.


Add 2 Tablespoons of natural peanut butter.


Add 2-3 teaspoons of raw honey and blend well.

This recipe makes 2 servings.
