I have been making this salad a lot this summer.  The high water content in the romaine, strawberries and cucumbers make it so refreshing.  This salad is perfect for those hot summer afternoons and evenings.  It makes a wonderful meal with a warm chicken breast fresh off the grill.  I find it light but very satisfying.  Enjoy!

Chop one head of romaine lettuce and place in a salad bowl.

Peel and chop one seedless english cucumber and add to romaine.

Chop 1 quart of ripe strawberries and add to the cucumber and romaine.

Add 1/2 cup roasted and salted sunflower seeds.

In a small bowl place 1/2 cup olive oil, 2 Tablespoons white wine vinegar,

3 Tablespoons plain yogurt, 1 teaspoon dijon mustard, 1 teaspoon honey, 1 small shallot minced,

and 1/4 teaspoon sea salt.  Whisk until well combined.

Top salad with dressing to taste.  Toss well and keep remaining dressing in an airtight container in the refrigerator.
