Chicken Bone Broth

Ingredients

1 whole free-range chicken

1 large onion, chopped

2 large carrots, chopped

3 celery sticks, chopped

4 cloves of garlic, smashed

2 TBSP apple cider vinegar

1 bunch parsley

Filtered water

Sea salt

Instructions

  1. Place the chicken, onion, carrots, celery, garlic, and vinegar in a slow cooker.
  2. Fill with filtered water to cover.
  3. Let the ingredients sit for 30-60 minutes to allow the vinegar to start pulling the minerals from the bones.
  4. Turn the slow cooker on high and bring to a boil.
  5. After one hour, remove the scum that rises to the top.
  6. Turn the slow cooker to low and cook for 24 or more hours.
  7. Add the parsley for the final 10 minutes of cooking.
  8. Use a slotted spoon to remove the chicken carcass. The over-cooked meat is mushy and flavorless but can be saved and fed to pets.
  9. Strain the broth through a fine sieve.
  10. Season to taste with sea salt.
  11. Store in the refrigerator or freezer for later use.
