1 whole free-range chicken
1 large onion, chopped
2 large carrots, chopped
3 celery sticks, chopped
4 cloves of garlic, smashed
2 TBSP apple cider vinegar
1 bunch parsley
Filtered water
Sea salt
Instructions
- Place the chicken, onion, carrots, celery, garlic, and vinegar in a slow cooker.
- Fill with filtered water to cover.
- Let the ingredients sit for 30-60 minutes to allow the vinegar to start pulling the minerals from the bones.
- Turn the slow cooker on high and bring to a boil.
- After one hour, remove the scum that rises to the top.
- Turn the slow cooker to low and cook for 24 or more hours.
- Add the parsley for the final 10 minutes of cooking.
- Use a slotted spoon to remove the chicken carcass. The over-cooked meat is mushy and flavorless but can be saved and fed to pets.
- Strain the broth through a fine sieve.
- Season to taste with sea salt.
- Store in the refrigerator or freezer for later use.
