Mincing garlic

I love garlic and use it often in my cooking. To save time, I prep it ahead with my mini food processor. Place peeled garlic cloves and a pinch of salt in the bowl of a mini food processor. Add enough olive oil to cover the cloves and pulse the food processor until all of the garlic is minced. Store in an airtight container in the refrigerator for up to a week. To store for longer than a week, scoop the minced garlic into an ice cube tray and place the tray in the freezer until set. Transfer the frozen cubes to a freezer safe container and store in the freezer for up to 6 months.
