Drinking this Thai Green Smoothie is a refreshing way to start the day. It tastes clean and healthy. I like this smoothie because there are so many benefits to each of the ingredients. Enjoying them all in one drink is a huge win for the day.

-Coconut water is full of electrolytes and minerals.

-Pineapple contains the powerful digestive enzyme bromelain.

-Cilantro is a great chelator which means it helps remove toxic heavy metals from the body.

-Fresh lime is good for the skin and improves digestion.

-Spinach is a great source of iron, calcium and other nutrients.

-Avocado is loaded with protein, fiber and good fats.

I love it when I have time to crack open a young Thai coconut and use the water from it. When I do, I also add some of the fresh coconut meat to the smoothie. After pouring out the water, just scrape the soft flesh from the inside of the coconut. You can eat it plain, add it to smoothies, or make a fresh coconut pudding. Just blend the coconut meat, coconut water, your sweetener of choice and vanilla. Enjoy!

Thai Green Smoothie

  • Yield: 2 servings 1x

Ingredients

Scale

1 cup fresh or bottled coconut water, chilled

3 cups fresh or frozen pineapple

1 lime, rind removed

3 cups fresh spinach

1 cup fresh cilantro

1/2 avocado

1 handful of ice, optional

Instructions

1. Place all the ingredients in a blender.

2. Blend well until smooth

3. Serves 2
